Cod, not tuna, is really the chicken of the sea. The fish were once so abundant that it was said you couldn't drag a net anywhere between Cape Cod and Ireland without pulling up a thousand Cod. Because of this, cuisines from the Americas to old Europe feature Cod recipes in all shapes, styles and sizes.

One of the most popular is the fish taco, which comes from Mexico. Because cod has a mild taste, it's perfect for tacos with fresh ingredients that can each be tasted and not overwhelmed. A typical fish taco will have cilantro, a bit of red pepper seasoning, chilli pepper seasoning, vegetable oil, lemon juice and cilantro. You can also add mayonnaise and sour cream to taste, not to mention fresh salsa, cheese, lettuce and tomatoes.

The recipe that's probably best known to folks from New England and the Atlantic coast is the Lemon Baked Cod. It's the simplest of cod recipes. You simply coat a one pound cod filet with butter and lemon, then dredge it in a mix of flour, salt, and paprika. Of course you can season it to taste with other spices (black pepper being a common choice). Then just bake and serve.

On the other side of the pond you'll find that one of the staples of the English diet is "fish and chips." By "chip", the English are actually referring to what Americans call "French Fries." (They call potato chips "crisps", incidently).

Anyway, Fish and Chips is to the English what steak and potatoes is to Americans. The most quintessentially universal meal in the culture, an example of something your fathers, and their fathers, and their fathers fathers ate all the way back as far as memory stretches. And for the english, at the heart of it is the cod.

The classic fish and chips cod recipes are very similar to the Lemon Baked Cod recipe above. The main differences are that rather than keep the fish cut whole in one big filet, the fish and chips recipe calls for the cod to be cut into more managable chunks of about three ounces each. You still coat the chunks in butter and flour, then instead of baking, you drop them into a deep fat fryer and cook them for anywhere from six to ten minutes depending on how big the chunks are.

Sadly, these meals are in danger of becoming less popular in the years ahead. Once thought to be so abundant they couldn't be overfished, cod are now endangered in the Atlantic. Fishing fleets from Canada, New England, the Azores, Portugal and the British Isles have had to lie dormant since the early 1990s while the species recovers its numbers.
