Having a brunch party? How to line up a fabulous menu of do-ahead brunch recipes

Brunch parties are a year around favorite. However, if you're the cook, you can be worn to a frazzle before you sit down to eat. This can take all the fun out of the occasion for you. Quiches and frittatas are great make-ahead brunch recipes. Just as tempting as an omelet, but a bit more exotic. If you're into making the pastry shell, you can do that, or, you can opt for a purchased frozen or refrigerated pastry shell from the supermarket. Like an omelet, quiches and Fritattas are an anything goes sort of concoction. Spinach, onions and cheddar are a classic combination. Try pairing salad shrimp, cilantro and cream cheese. Make an all veggie combination with sliced mushrooms, onions, bell peppers and fresh parsley. Each quiche or Frittata adds up to about six generous servings. If you've got a big crowd, bake a few of these pies. Bake tonight and warm in the morning. If you have any leftovers, this brunch recipe makes a nice take home offering for your guests. Did you know that pancakes freeze quite well? Get out the griddle and fry up a bunch. Make a double or triple batch from a standard mix. Divide the mix into three bowls. Ambrosia salad makes a great do-ahead brunch recipe. The evening before your brunch, slice up a selection of fruits, such as strawberries, mandarin oranges, bananas, diced fresh apple, frozen blueberries and Maraschino cherries. Mix these fruits in a large bowl and add shredded coconut, along with a mixture of yogurt and non-dairy whipped cream. Cover the bowl with plastic wrap until you're ready to serve.

Artisan breads go well with your quiche and Frittata. Most large supermarkets now offer a variety of fancy breads, such as garlic-Parmesan, rosemary, or Jalapeno and cheddar. Pick up some loaves well in advance of your brunch and freeze. Thaw on the counter the night before. Match your breads with your egg dishes.
