Favorite Chinese Food Recipes

Chinese cuisine is one of the worlds most diverse and interesting, with the massive geography of the country creating a number of fascinating (and delicious) variations. As an amateur Chinese chef, Id like to share with you some of the recipes that Ive enjoyed making and eating. These Chinese food recipes are fairly low-impact, but I would recommend investing in a good chefs knife and a wok before stepping behind the burner.

Some of my favorite Chinese food recipes come from my Chinese friend Sam. His Ma Po Tofu is to die for. Ma Po Tofu, literally translated, means "Pock-Marked Womans Face Tofu" this refers to the appearance of the simmered tofu in the dish. Made with marinated pork, mashed black beans, and bean curd, the tofu is first blanched and then stir-fried with the pork and leeks, chili paste and other ingredients. Its a simple, inexpensive dish that is also extremely delicious.

One of the most common Americanized Chinese food recipes is barbecued pork the sweet, savory glaze is a mainstay of cheap Chinese places here in New York, and the sticky, messy feeling it leaves on your fingers is just part of the fun. The keys to the barbecued spare ribs that they serve is in two parts the marinade and the glaze. The essential ingredients are pretty simple soy sauce, hoisin sauce and ketchup. After marinating overnight, the ribs will absorb plenty of flavor. Once you pop them in the oven, you want to brush them with a mixture of honey dissolved in boiling water. Five or six times over the course of an hour should do it, and when you take them out theyll be lip-smacking good.

One Chinese dish that seems to elude many home chefs is fried rice. If prepared incorrectly, fried rice can degrade into a sticky, glutinous lump, unfit for even a dog to eat. The first step in a real Chinese fried rice is to undercook the rice first. If you have a rice cooker, use it, and make sure the rice is still a little crunchy when you take it out. Let it cool completely before you throw it in your wok with some oil, making sure to completely coat your grains. Then slowly add in chicken stock and toss, toss, toss. Itll be the best fried rice youve ever eaten.
